Why Make Rosemary Garlic Salt?

Aside from the satisfaction of reducing food waste, making rosemary garlic salt is an easy way to capture fresh flavours and have them ready at your fingertips. By using up leftover herbs and garlic, you’re not only creating a unique seasoning that’s hard to find in stores but also giving those ingredients a new lease on life.
Even if your herbs or garlic have been sitting around for a bit, they’re perfect candidates for this recipe. As long as they’re still fresh-smelling and free of mould, you can chop them up, mix them with salt, and enjoy a practical and waste-reducing seasoning that’s all your own.

How to make

Rosemary salt:

Ingredients:

- 1 cup packed fresh rosemary leaves

- 3 cup coarse salt, such as sea salt

- 2 cloves of garlic

Instructions:

1. Put 1 cup packed fresh rosemary leaves and the cups of coarse salt and the garlic in a food processor.

2. Pulse on and off about 8 to 10 times, or until the rosemary is blended into the salt. The texture should be similar to table salt; it will be damp and look almost like wet sand.

3. Spread out on a baking sheet and put it in the already heated oven for 25 minutes at 225 degrees.

How to Use

Rosemary garlic salt can add an earthy, aromatic boost to nearly anything you make. Here are just a few ideas for how to use this versatile seasoning in everyday cooking:
  • On Roasted Vegetables: Toss your favourite vegetables with a sprinkle of rosemary garlic salt, olive oil, and roast. Potatoes, carrots, and even squash will take on a richer, deeper flavour.
  • With Meats and Seafood: Rub the seasoning on chicken, steak, or salmon before grilling or baking to give a herbaceous crust that makes every bite flavorful. You can also use it as a finishing touch on cooked dishes to give them that last hit of aromatic goodness.
  • In Baked Goods: Yes, savoury baked goods love a sprinkle of rosemary garlic salt! Try adding a dash to focaccia, breadsticks, or even homemade crackers for a subtle but flavorful twist.
  • As a Finishing Touch: A pinch of this salt works wonders when sprinkled over scrambled eggs, avocado toast, or a bowl of soup right before serving. It gives each dish an extra layer of flavour and aroma.
  • Unexpected Sweet Pairings: Rosemary and garlic might sound unusual on desserts, but try just a small pinch on dark chocolate, caramel, or vanilla ice cream. It creates a beautiful contrast, with the earthy flavours enhancing the sweetness in surprising ways.

Tips for Customizing

One of the best parts of making rosemary garlic salt is that it’s so easy to customize! Here are some ways to personalize your blend:
  • Add Other Herbs: Got extra thyme, sage, or oregano? Chop them up and add them to the mix. Just be mindful of how the flavours combine—rosemary’s strong, woodsy aroma pairs well with earthy herbs like sage or thyme.
  • Adjust the Garlic: If you’re a garlic lover, feel free to add an extra clove or two for a bolder, more pungent blend.
  • Add Heat: If you like a bit of spice, add a pinch of red pepper flakes or ground black pepper to your salt. It’s a simple way to bring a little heat to the seasoning.
  • Try Different Salts: Coarse sea salt works well, but you could also try Himalayan pink salt or even flaky Maldon salt for a slightly different texture and taste.

Remember to save the next leftovers for your Homemade Seasoning

Transforming leftovers into homemade seasoning is one of the simplest and most satisfying ways to reduce waste in the kitchen. By using herbs and garlic that might otherwise end up in the trash, you’re taking a small but significant step toward a more sustainable kitchen. Plus, making a homemade rosemary garlic salt gives you the freedom to tweak and experiment, creating a custom blend that’s fresher and more flavorful than anything you’d buy in a store.
Next time you find yourself with extra herbs or garlic, try making your rosemary garlic salt. Not only is it a creative and sustainable way to reduce food waste, but it’s also a treat for your future meals—whether they’re savoury, sweet, or somewhere deliciously in between.
Making your rosemary-infused salt not only reduces food waste but also allows you to create a flavour that is tailored to your taste preferences. So, the next time you have leftover rosemary, don't discard it. Instead, make it a flavourful ingredient that will take your cookery to new heights.
