Preserved grapes are gently cooked and sealed in a light sugar syrup that enhances their natural sweetness. The result is a jewel-like mixture of red and green grapes that look as beautiful as they taste.

Recipe: Preserved Grapes in Syrup

Yield: About 1.5 liters (one 1L jar + one 500ml jar)

Ingredients

For the fruit:

  • ~1.2–1.3 kg firm, seedless grapes (red and green; washed and destemmed)

For the syrup:

  • 500 ml water

  • 300 g white sugar (for a ~40% syrup)

  • 1 tbsp lemon juice (to help preserve color and freshness)

Optional flavorings:

  • A few cloves

  • One stick of cinnamon

  • 1–2 slices of fresh ginger

  • A few cardamom pods

  • A strip of lemon peel

Instructions

1. Sterilize the jars

Wash jars and lids thoroughly with hot, soapy water. Rinse and sterilize them in boiling water or in a 100°C (212°F) oven for 15 minutes. Keep them hot until use.

2. Make the syrup

In a saucepan, combine water, sugar, and lemon juice. Heat gently, stirring until the sugar dissolves. Bring to a boil, then reduce to a simmer. Add any optional spices and let it simmer for 5 minutes.

3. Prepare the grapes

(Optional but recommended) Blanch the grapes for 30 seconds in boiling water, then immediately transfer them to ice water. This helps prevent skin splitting and keeps the texture firm.

4. Pack the jars

Fill the sterilized jars tightly with grapes—firmly but without crushing them. If you’re using spices, you can add them directly to the jars.

 

5. Add the hot syrup

Pour the hot syrup over the grapes, leaving about 1 cm (½ inch) of headspace. Tap the jar gently or use a utensil to release any trapped air bubbles.

 

6. Seal the jars

Wipe the rims clean, then close with sterilized lids and secure the metal clamps or screw bands.

 

7. Process for shelf stability

Place the sealed jars in a boiling water bath, ensuring they’re fully submerged.
Process for 15 minutes (add 5 minutes if you live above 600 meters / 2000 feet).
Remove and let cool for 12–24 hours. Once cool, check the seals—there should be no “popping” in the lid.

 

Storage and Shelf Life

  • Unopened: Store in a cool, dark place for up to 12 months

  • Opened: Keep refrigerated and consume within 2–3 weeks
