Fermented Strawberries: A Sweet & Tangy Summer Ferment
Fresh, juicy, and naturally fizzy, Fermented Strawberries are one of the easiest and most rewarding fruit ferments you can make at home. This simple recipe combines ripe strawberries with fresh ginger and a light salt brine to create a delicious probiotic-rich treat that’s perfect for yogurt, desserts, sparkling drinks, and more.
If you're new to fermentation, this recipe is a fantastic introduction. Because strawberries ferment quickly, you'll be enjoying your homemade Fermented Strawberries in as little as 24–48 hours.
Why Make Fermented Strawberries?
Fermenting fruit enhances flavor while introducing beneficial bacteria that support gut health. These Fermented Strawberries develop a lightly tangy taste, gentle effervescence, and complex fruity notes that make them far more interesting than fresh berries alone.
Benefits of making Fermented Strawberries:
- Naturally probiotic-rich
- Quick fermentation time
- Easy beginner-friendly recipe
- Delicious sweet-and-sour flavor
- Great way to preserve seasonal strawberries

Fermented Strawberries with Whole Ginger
Yield: 1 × 700 ml jar
Ingredients
- 350–450 g fresh strawberries, whole
- 10–20 g fresh ginger, sliced or lightly crushed
- 500 ml filtered water
- 10 g sea salt
This creates a 2% fermentation brine.
Method
Wash the strawberries gently and remove any damaged fruit.
Keep the berries whole, but remove the green tops if you plan to use them later for the no-waste cheong recipe below.
Add the strawberries and ginger to a clean 700 ml fermentation jar.
Dissolve the sea salt completely in the filtered water.
Pour the brine over the strawberries.
Ensure everything remains fully submerged beneath the liquid using a fermentation weight.
Seal the jar and ferment at room temperature for 24–48 hours.
Begin tasting after the first day.
The ideal Fermented Strawberries should be:
- Lightly tangy
- Slightly fizzy
- Still fresh tasting
- Firm rather than mushy
Once the flavor is where you want it, transfer the jar to the refrigerator.
How to Enjoy Fermented Strawberries
These delicious Fermented Strawberries are incredibly versatile.
Try them:
- Over yogurt
- On oatmeal or porridge
- With pancakes or waffles
- On ice cream
- In summer desserts
- In sparkling water with a splash of fermentation brine
- As a topping for smoothie bowls
Their sweet, tangy flavor makes them an excellent addition to both breakfast and dessert recipes.
Important Notes
Because strawberries are naturally soft and contain a lot of sugar, Fermented Strawberries should be treated as a short ferment.
Storage
- Refrigerate immediately after fermentation.
- Best consumed within approximately 1 week.
Always use clean utensils when serving.
